Six Weeks, One Chance: The Family That Judges All 12 of Your Sites
The school gates just shut for six weeks. Somewhere out there is a family that will visit three of your locations this summer — and remember only the worst one.
The summer holidays turn multi-site consistency from a nice-to-have into your whole reputation. A family on a staycation road-trip doesn't experience your brand as twelve separate venues; they experience it as one promise, tested repeatedly. Warm welcome and a spotless, well-run site in Exeter; a 20-minute wait, a grubby table and a two-star hygiene sticker in the window in Bristol — and it's the Bristol trip they'll tell the group chat about.
The cautionary tale here is Jamie's Italian. At its peak the chain had 42 restaurants; by 2019 it had collapsed into administration with debts of around £80 million and roughly 1,000 jobs lost, closing 22 of its final 25 sites. Oliver himself has since said the failure came from not getting the 'basics' right — sourcing, staff training and consistency. Tellingly, he's now rebuilding the brand in the UK from 2026 with exactly those basics front and centre: tighter standards, better training, a promise the whole estate can actually keep. Growth without consistency isn't growth; it's exposure — and the operators who last are the ones who learn that.
Customer experience is the sum of a thousand small standards — service, cleanliness, hygiene, presentation — being met at every site, every shift, by trained people. You can't manage that on gut feel across a dozen locations. You need those standards written down, owned, dated and visible, with training tracked against them — the same discipline you'd apply to a fire certificate, applied to the things guests actually feel.
