The Premier League is back this weekend. For every match-day venue, the opening fixtures are an audition and the fan is deciding whether this becomes 'their' place for the next nine months.

A great match-day isn't luck. It's the pint poured fast by a trained team, the food out hot from kit that works, the screen that stays on, the atmosphere handled well when it's packed and loud. Get it right and you've won a regular who'll be back 38 times. Get it wrong: slow service, cold food, a screen that drops out at kick-off and you've lost not one visit but a whole season of them, plus everyone they'd have brought.
