Curry week, stews, pies, everything melted and molten — comfort-food season is here, and it's one of the best margin opportunities of the year. It's also one of the easiest to let leak away in waste.

Comfort food sells itself when the nights draw in. The catch is that the cosy classics are batch-cooked and stored — so whether they turn into margin or waste depends less on guesswork and more on how well your cold chain holds, how your team is trained, and how your waste is handled. An unreliable fridge, an untrained new starter or a bin that isn't sorted to the rules can quietly turn a great season into a costly one.

Waste is the silent tax on the season. UK hospitality already throws away an estimated £3.2 billion of food a year — around £10,000 per outlet — and about three-quarters of it was edible, with preparation and spoilage making up the bulk. That's exactly what a reliable, serviced cold chain and a well-trained team prevent. And since England's Simpler Recycling rules landed in March 2025, that waste has to be separated and handled properly too. The encouraging flip side: WRAP finds roughly £7 comes back for every £1 spent cutting waste.
